  • Roughly two years of work to clear U.S. dairy import requirements
  • The founder's own memory of the soft serve he grew up with

  • A walk-up counter attached to an existing ramen shop, not a storefront of its own
  • Shiratama, kinako, kuromitsu and hojicha served alongside chocolate and fruit from local makers
  • Positioned as the dessert after dinner, using a restaurant's own foot traffic

  • Coffee jelly, a fixture of the Japanese kissaten
  • Agar, set from seaweed rather than gelatin

  • Agar reintroduced as the plant-based answer Seattle was already looking for
